One of the most challenging times of the day is when we get home with the kids from school. They have to start their homework, we have to start making dinner, but they’re already hungry because the snack they had at school wasn’t to their taste. We’ll show you three crowd-pleaser recipes that are a surefire way to soothe anyone’s hunger. And what’s really great is that they don’t require much work to make. These snacks are simple, healthy and not only for the kids, they’ll surely be a hit if you serve them at any gathering.
Grapes with cream cheese
Ingredients:
A bunch of grapes
125 grams of plain cream cheese
0.85 cups of sour cream
1 teaspoon of vanilla extract
Icing sugar to taste
Lightly walnuts or pecans roughly chopped
Preparation:
Mix the cream cheese with the sour cream and icing sugar and add a little vanilla extract to taste. Combine with grapes then chill in the fridge. Serve topped with chopped walnuts of pecans.
Celery filled with cottage cheese
Ingredients:
Celery
Low-fat cottage cheese
A couple of spoons of yogurt or sour cream
2-3 spring onions
Salt, pepper
Preparation:
Combine the cottage cheese with the sour cream or yogurt. It shouldn’t be too thin. Add finely chopped spring onions, salt, and pepper to taste. Wash chop the celery then fill them with the cream. Decorate with the green part of the spring onions. You can serve it with a couple of crackers. There are variation made with curded ewe-cheese instead of cottage cheese or labneh instead of sour cream. Or if you’re adventurous you can fill the celery with hummus.
Puff pastry sticks with spinach and cottage cheese
Ingredients:
A package of pre-made puff pastry
200 grams of feta cheese
150 grams of cottage cheese
250 grams of frozen spinach
Salt
Pepper
1 egg
Preparation:
Unfreeze the spinach then squeeze out its liquid content. Combine the cottage cheese with the feta, add the spinach and salt if needed but the feta is salty enough in most cases. Cut the puff pastry into strips then fill with the cheesy mixture then shape them into long sticks. Brush with beaten egg before baking in an oven set to 190 Celsius until golden.
